Time: 1 1/2 hours
4 chicken breasts (small)
1 cup rice ( 1 bag 10 minute rice)
1/4 chopped onion
1 stalk celery
1 8oz. can of tomato sauce
1 Tsp Cumin
Olive oil to cover bottom of pan (butter can be used)
Boil chicken breasts for 1 hour. Allow to cool so that they can be cut up or shredded. 1/2 hour before meal, brown rice in olive oil or butter until golden brown. Add 2 cups water and cook until rice is done. Add onion and celery and cook approximately for 10 minutes. Add tomato sauce, cumin and cubed or shredded chicken and salt and pepper to taste and cook for about 5 more minutes to allow the added ingredients to blend. it is ready to serve.
**This is so good and it is correct, serves 2 and so there are no leftovers.
Note: I also use boneless skinless chicken breasts.
