Ed's Fast Grilled Fish

1 lb. fish of your choice (whole trout, filet of sole, cod, etc)

2 Tbsp. butter

4 oz. plain Italian dressing

1/2 small chopped onion

dash garlic salt

dash pepper

 

Make a boot out of tin foil to hold the fish and make sure there is enough foil to seal the boat. Place fish in boat and all the other ingredients. Broil over grill about 15 minutes. Check to see if dressing is boiling. When fish flakes, it is cooked.

 

I did not make the fish, instead I substituted chicken. I used 4 pieces of boneless skinless chicken breasts. I put them in a  dish that would go into the oven. I put the butter in the pan in small dabs over the chicken and then added the other ingredients. While you are preparing the chicken and ingredients, you can preheat the oven to 350 degrees. Once the oven was ready, I put the chicken in and checked it around 30 minutes, but still needed about 15 more minutes. Total cooking time 45 minutes at 350 degrees.

 

My husband loved it and said it was so tender. I served it with a pasta side. You can try other meats besides the fish with this just adjust your cooking time accordingly. I am going to try the fish with this when we are going to grill. Sounds so good.
