I always loved frito pie at my college at Pan American University after classes. I would go into the school lunchroom and get the frito pie. It was made so easily with just a bag of fritos with chili and cheese on top and put into the microwave just long enough to melt the cheese. It was so good even though it was made so easily. I could not find a good recipe for frito pie on any website so I made my own chili with a recipe I found online and adapted the recipe I found online for frito pie. It turned out okay and my husband who never had frito pie before (believe it or not) said it was good. He ate it all, so we had no left overs. Here is the ingredients and recipe:
Prep time: 10 minutes
Cooking time: 25 minutes
Ingredients for Chili
2 Tablespoon vegetable oil
1 small onion (chopped)
1 lb hamburger meat
2 cans (14 1/2 ounces) tomato sauce
2 teaspoon chili powder
1/2 teaspoon ground cumin (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring for 3 minutes. Add the ground beef and cook, breaking up the lupms with a wooden spoon, until the meat is no longer pink, 2 to 3 minutes or more. Stir in the tomato sauce, chili powder, cumin (if using), salt and pepper. Simmer, stirring occasionally, for another 15 minutes, until thick. Set aside. Preheat oven to 350 degrees.
Frito Pie directions:
Put 1 bag of fritos (15 ounces) on the bottom of a 9 inch X 6 inch baking dish (either glass or metal for the oven) and then pour your chili on top. When the oven is ready, bake the dish for 10 minutes and then add your cheeses on top and cook for about 5 more minutes or until the cheese is melted. It is best to use grated cheese, whatever kind of cheese you want. Serve anfd enjoy.
