Potato Pancakes (Latkas)

3 Medium Potatoes, 2 small potatoes

1/4 medium yellow onion

1/2 teaspoon salt

2 eggs

flour to absorb and thicken

Applesauce or sour cream for topping on pancakes

Fryer set at 350 degrees and cooking oil to fry the pancakes

 

Peel and cut up potatoes and chop up onion. Put the potatoes, onion  in a blender or food processor and blend up until no lumps left. After that mix is blended, add the salt and 2 eggs until well blended. When mix is all blended, put it in a bowl and add flour as needed to absorb and thicken the mixture. Once the mixture is thick enough to drop in the fryer, drop two tablespoons of mixture for each pancake. Let the pancakes cook on each side until they are cooked to a golden brown. Makes about 10-12 pancakes.

 

Note: Best to put the cooked pancakes into a dish with a lid to keep warm until all the pancakes are made. Eat and enjoy the pancakes with applesauce or sour cream topping. This is the best pancakes my husband has ever made.
